Mardi Gras has returned to Universal Studios Florida, and as part of the celebrations, international cuisine is available around the park. At the San Francisco food truck, a returning favorite is joined by a new dish.

Nashville Hot Chicken Mac & Cheese – $10.99
Creamy white cheddar mac & cheese topped with crispy chicken bites tossed in Nashville hot sauce and green onions (substitute sauces: hot honey or golden BBQ)
We loved this dish before, and we still love it. Although the bowls are small, the chicken is piled high, making it a great portion size for the price. If you’re not a fan of spicy things, you can also order this dish served with hot honey or golden BBQ sauce instead. We love spice, so we went with the Nashville Hot, and it certainly served up the heat!
It’s a hot, saucy dish, and the mac and cheese will eventually get overtaken by the flavor of the Nashville Hot chicken. We’re no experts when it comes to true Nashville Hot sauce, but this tasted more like General Tso’s chicken with a strong brown sugar taste. There’s a lot of heavy sweetness to the sauce as it competes to hold its own against the spice, but we absolutely loved the flavors. Be sure you grab napkins because you’re going to need them! Approach with caution if you aren’t a fan of hot, spicy foods. The mac & cheese was very creamy and paired well with the chicken, but the chicken is the main focus here.
This Nashville Hot Chicken Mac and Cheese is a filling meal that will leave you satisfied. Not only is it delicious with a spicy kick, but the food truck lines are often shorter than the restaurants, making it a quick meal on the go.

The biscuit is very dry and crumbly. The chicken is juicy, and the Nashville hot sauce and gravy work well together. However, they ran out of the correct chicken, so they gave us the chopped chicken that goes on the mac and cheese.
The slaw was pretty forgettable and didn’t add much to the overall dish. Some of us liked this. Others thought it was just okay.
